In the Graves area of Bordeaux, France you'll find one of my favourite wine regions, a little place called Sauternes. In Sauternes, a bit of a phenomenon takes place. The perfect set of conditions allows a fungus, called Botrytis Cinerea, to affect the grapes in such a way that they shrivel and lose moisture, leaving behind a concentrated nectar. This process is also known as noble rot and the result is nothing less than liquid gold. This isn't a typical dessert wine. It's sweet, but it's balanced with high acidity and alcohol so it comes across as super refreshing. It can be paired with a savory main course, it's that versatile.
